Inspiration

Inspired by Niamh aka Eat Like a Girl who ran a market stall at Covent Garden Real Food Market and Abiye who sells what has to be London’s best hotdogs at BigAppleHotDogs, I have created The Shoreditch Smoker at Red Market in Shoreditch.

With some help from Stuart and Fred@Disappearing Dining Club, some chats with the friendly folks at Cooks with ThaneTheRibman, Kimchi Cult, BigAppleHotDogs, RedMarketLondon and some great help from Rochelle from Rushmore, I have created the Shoreditch Smoker!

Street Food

The food on offer is prepared in a secret underground bunker in Shoreditch and goes through the process of being cured, cooked and smoked in various ways and for various amounts of time. Here is the cold smoker we use to smoke some of the Salmon.

The smoker somehow reminds me of the Black Knight in Monty Python’s Holy Grail. “It’s just a flesh wound!”

Our most famous products are the “Hot smoked” and “Cold smoked” salmon served on toast with Crème fraiche and chives.

We also serve Smoked Ham on toast with home-made piccalilli.

Other dishes include -

          – 1/2 pint of smoked prawns and 

          – Smoked Pulled Pork sandwiches with BBQ sauce

Bread

The bread is supplied by the folks at E5 Bakehouse. Based in London Fields, they supply us with the most incredibly tasty organic bread. We use the Multigrain and the Borodinsky rye bread to serve the Salmon and Ham dishes.

Feedback

The stall has only been open for a week and already the feedback has been incredible -

Martin, a Canadian chef at the end of a three-week holiday in England said that the smoked salmon was “The best food I have had in England.”

Dave, a fellow food smoker said the piccalilli was “The nicest I have ever tried.

A chef who is working at the two Michelin star restaurant L’Atelier de Joel Robuchon commented that the salmon was “Fantastic.

The Red Market is at 288-299 Old St, EC2. Access from Old St tube/rail or Shoreditch High St Overground. noon-midnight Fri/Sat.
